This is a lovely switch from the usual mashed potatoes. I was looking for something different but not too over the top and I think this is it. I have some lovely Kerrygold cheddar to use in this recipe but was afraid to. Why? I don’t know. Hubby is so picky but I bet he will like and if not I will take to the neighbors as a gift dish. Maybe they will like it. They are very set in their recipes and this might shake things up.
I was going to take a dessert but last time I was there fore a holiday feast, there were about 10 pies and various other desserts.
I love your use of shallots. I love them and I love that you used them in this recipe.
4 lb potatoes – baked, then mashed
1 1/2 c minced shallots
3 c grated white cheddar (divided in half)
3 c sour cream
1 Tbsp salt (use more or less to taste)
1/4 tsp ground white pepper
1. Mix the potatoes, shallots and cheese in a large mixing bowl until well mixed. Season with salt and pepper. Fold in the sour cream one cup at a time.
2. Oil a large baking dish (13 X 9 or larger pan will do) very well. Place the potato mixture in the pan and sprinkle top with the reserved cheddar cheese. Bake in a 350 oven for 25 minutes until hot and lightly browned.
