While there are nights when you want to go out of your way to cook an elaborate meal there are others where all you want to do is come home and throw something together in ten minutes. If you’re like most families then chances are your schedule only allows for a few elaborate meals and more often than not you’re throwing together dinner last minute. At least that is how it is in my house.
It’s on those nights where casseroles come in handy.
So this dish isn’t exactly health food since we’ve packed it full of cheese and other yummy deliciousness, but we made sure to also pack in the protein and veg, in the form of chicken, zucchini, onion, and tomatoes so it’s not a total loss.
