This recipe is great I made this as a cheese ball and rolled it in walnuts. I brought it to Thanksgiving dinner and they called and asked me to bring it for Christmas. I also reduced the feta cheese by half.
I made with corn tortillas — they don’t roll as well, and certainly don’t hold together. I loved the idea of these, though, and will keep tinkering with a gluten-free option. Also, cheese is hard to spread, not sure of the solution for this.
hese have become a holiday tradition every year, great for work parties and family gatherings. I use spinach tortilla’s, and supplement the filling with sour cream (helps mixture to spread more easily), diced smoked ham, and a dash of garlic powder and herb seasoning. It’s so easy to make and always a hit!
1 package dried sweetened cranberries
1 container cream cheese spread
1 cup crumbled feta cheese
1/4 cup chopped green onion
4 large flour tortillas or 4 large wheat flour tortillas or 4 large spinach tortillas.
1 Combine all ingredients except tortillas, mix well.
2 Divide and spread mixture evenly among tortillas.
3 Roll up tightly, wrap in plastic and refrigerate at least one hour.
4 To serve cut into 12 slices.
5 A nice variation is to add thin slices of ham on top of the spread before rolling.
