1 2/3 cups sugar
3/4 cup Land O Lakes® Butter softened
3 large Land O Lakes® Eggs
1 teaspoon vanilla
2 cups all-purpose flour
2/3 cup unsweetened cocoa
1 1/4 teaspoons baking soda
1/2 teaspoon baking powder
1/2 teaspoon salt
1 1/3 cups Land O Lakes® Half & Half
1 (8-ounce) package cream cheese, softened
1/2 cup creamy peanut butter
2 tablespoons Land O Lakes® Butter softened
4 1/2 cups powdered sugar, sifted
2 teaspoons vanilla
2 to 3 tablespoons Land O Lakes® Half & Half
How to make
Heat oven to 350°F. Grease and lightly flour 2 (8- or 9-inch) square or round cake pans; set aside.
Combine sugar and 3/4 cup butter in bowl. Beat at medium speed, scraping bowl often, until creamy. Add eggs and 1 teaspoon vanilla; continue beating until well mixed. Add flour, cocoa, baking soda, baking powder and salt to butter mixture alternately with 1 1/3 cups half & half, beating just until mixed.
Pour batter evenly into prepared pans. Bake 30-40 minutes or until toothpick inserted in center comes out clean. Cool 10 minutes. Remove from pans. Cool completely.
Place cream cheese, peanut butter and 2 tablespoons butter in bowl. Beat at low speed, scraping bowl often, until creamy. Add powdered sugar, 2 teaspoons vanilla and enough half & half for desired frosting consistency.
Place 1 cake layer onto serving plate. Spread 1 cup frosting over top; top with second cake layer. Spread remaining frosting over top and sides of cake.
