The colder months of the year sometimes make me not want to cook at all. I just feel like I want to curl up in a ball in front of the fireplace, under a cozy blanket, and hope that I won’t freeze or starve to death!
Oh yeah, have I ever mentioned I’m more of a summer type of person? Haha! Well, there is one exception I’d be happy to make when it comes to cooking in the winter. I love making slow cooker stews! The lingering scent of delicious food alone is enough to make you warm on a cold day. And slow cooking brings out all those beautiful flavors that make the dish even tastier.
Here’s a great beef stew with herb dumplings, and it will only take you 20 minutes to prepare the recipe! After that you can completely forget it and go on with your day, and return to the most scrumptious dinner ever.
What I love about this recipe is that it’s so versatile. You can make all kinds of little tweaks in the ingredients and it’ll always turn out super tasty!
For example you don’t always have to add carrots and potatoes – try other root veggies instead. You could also add some chili powder, red pepper flakes or even hot sauce, if you like your food spicy. YUM! I do love a good beef stew and dumplings – delicious, and as you say, very economical. It was a staple in my house growing up and it’s something I still love to make in the winter months when the weather is bad – perfect comfort food!!
