One-Pot Honey Soy Chicken & Rice Bake

Two things we never get tired of: easy, one-pot meals, and our go-to combo of honey and soy sauce. This amazing chicken and rice bake is both of those things — which is why we think it’ll become a family favorite for you, too.

This time we’re using honey and soy sauce as a savory marinade for chicken thighs, with a little sesame oil and rice vinegar to round out the flavors. The chicken starts off with a quick sizzle on the stovetop — super quick, because that delicious honey in the marinade will caramelize fast.

The next step is where the magic of this recipe happens: all you have to do is pour in some uncooked rice and chicken stock, and add a few Asian-inspired flavors like garlic, ginger, and green onion. Then bake the whole thing in the oven and you’ll end up with juicy, fork-tender chicken and some of the most flavorful rice we’ve ever tasted — in under an hour. That’s all it takes for a complete meal, so you don’t even have to think of any other side dishes or dirty any other pots.
