Taco Cornbread Casserole

This was actually quiet delicious, and easy. I only used 1 lb of hamburger, so I added 1 cup of black beans. I used Fire Roasted Tomatoes. Since we like spicy, I used Hot Taco Mix, added a fresh jalapeno, and fresh cilantro. I used the Jiffy Cornbread mix, and it seemed really thick and was hard to spread, but came out great! My boyfriend really liked this recipe, and I will definitely make it again.

A whole can of chilies adds fire to this cornbread casserole. For less heat, you can use just enough of the can for your taste.

The cornbread and beef bake together in one casserole dish, making this entree convenient. It’s packed with tempting seasonings, and the cheese and onions make an attractive topping.
