This recipe makes enough for one cheesecake and about twelve slices so there should be enough for everyone. It takes about forty-five minutes to prepare because the cookie dough has to be frozen. Then it takes ninety minutes to bake and another three hours in the fridge. Once you taste it, you’ll forget all about how long you had to wait!
Let’s Get Started!
The Ingredients To Gather Are:
Crust:
2/3 package of Oreos
4 Tbls butter
Cheesecake:
2 1/2 pounds cream cheese, softened
1 1/2 cups sugar
1/8 tsp salt
1/3 cup sour cream
2 tsp lemon juice
2 tsp vanilla
6 eggs, plus 2 egg yolks
1 Tlbs butter, melted
Cookie Dough:
1/2 cup butter
3/4 cup brown sugar
1 tsp vanilla
2 cups flour
1 can sweetened condensed milk
1 cup chocolate chips
The Step By Step Directions To Follow:
In electric mixer, beat butter, sugar. Add vanilla. With mixer on low, add in flour, until completely incorporated. Beat in milk until well combined. Stir in chocolate chips. Roll into small 1 inch balls. Place in freezer for 45 minutes, or until completely frozen.
Preheat oven to 325 degrees. Mix cookie crumbs, butter. Press into bottom of 9 inch springform pan. Firmly press it into the bottom, keeping it off sides. Bake 10 minutes. Let cool completely.
Increase oven heat to 500 degrees.Beat cream cheese on low until broken up, 1 minute. Scrape sides, add 3/4 cup of sugar, salt. Mix over low for about a minute, until combined. Beat in remaining 3/4 cup of sugar.
Scrape sides, add sour cream, lemon juice, vanilla. Mix on low for 1 minute.
The Additional Directions To Follow:
Then add in your egg yolks into they are well mixed. Next, put each whole egg in two at a time, then beat the mixture for about sixty seconds after adding each. Add about half of your frozen cookie dough balls, making sure they are as evenly mixed in as possible.
Next, carefully brush on approximately a tablespoon of the melted butter on the already baked crust. Put your pan on your baking sheet and then add your filling to the crust. Allow to bake for approximately ten minutes or so. Then lower the temperature of your oven to two hundred degrees but do not open the oven door. Allow to bake for about an hour and half longer.
Then allow it to cool for about five minutes. Once cooled, use a knife around the edges of your cheesecake to loosen it. Wait for about two hours or so and then cover the whole thing in plastic and place it in the fridge until it is nice and cold or about three hours.
To take the cheescake out of its mold, use a kitchen towel that has been warmed and place it around your pan. Allow this to set for about sixty seconds or side. Then take off the sides. Finally, cut your cheesecake into slices and add some whipped cream over top.
