What would we do without ground beef? I’ll tell you what – we’d be struggling, trying to make those weeknight meals when there just is no time to cook all the fancy meat dishes. Well, I know that’s what it would be like for me.
Ground beef is the perfect, most versatile ingredient I can think of. But somehow I always end up making the same, familiar recipes! I know – why fix something that isn’t broken?
The other day I realized I needed to do something to spice up the meals on our dinner rotation. Two out of three kids were complaining about a dish they all used to love! It’s a rule in our house that you can’t complain about food if someone else is making it for you.
But this time I couldn’t blame them… I had made the same dish 4 times in the past two weeks! So it was time for a change.
My kids absolutely loved this Mexican squash and ground beef casserole! Needless to say, so did my husband. We all enjoy spicy dishes so I decided to add a little bit of diced jalapenos as well.
This was also a great way to add some veggies to our dinner rotation! The flavors fit together perfectly and even the pickiest of eaters will love this casserole.
This recipe has been a great success over at Food.com! It has received plenty of wonderful feedback from readers. Let’s take a look at what some of them have said about it:
“Oh MAN. This was DELICIOUS!!!! I did make a SLIGHT modification because I didn’t have any tomatoes (diced or raw) on hand. I put in 1 cup of mild salsa in place of the tomatoes. Hubbs and I LOVED IT.”
“Very good dish! The only change I made is the addition of one medium zucchini I needed to use. Definitely added to our keeper list. Thanks for sharing!!!”
