The Blackberry Finally Gets Its Chance to Shine!

We see a lot of dessert recipes that call for blueberries, strawberries, raspberries and pretty much any other berry you can think of. However, we don’t often see recipes that call for blackberries, and we’ve always wondered why that is, because we happen to think blackberries are pretty delicious! Well, we recently discovered a dessert recipe that brings out the best in blackberries, and we just can’t wait to make these blackberry pie bars again! They’re a lot like a pie, but cut into bars that are ideal for dessert or a snack.

These bars are definitely a delicious twist on the traditional pie format. They have a mouthwatering shortbread crust along with a luscious filling that’s a lot like custard. Smooth and creamy! And it’s all topped off with a nice crumb topping that really pulls it all together and complements all of the other flavors and textures. Plus, we like that this recipe works well with any type of berry, so if you’re not real jazzed about blackberries, you can substitute strawberries, blueberries or anything else that strikes your fancy. You can also refrigerate them for up to three days if you have any leftovers or just want to make them ahead of time.
