I’ve been racking my brain to try and figure out if I have ever had a cherry cooking, and you know what? I don’t think I have. I obviously need to fix that because, hello!! Cherries are fantastic! I love cherry pie (more than almost any other pie) and cherry cupcakes (ok, they’re from the box with the cherry frosting from the can. Shhhhh).
I know that chocolate can be a touchy subject with some. To some white chocolate is the most vile. To others, dark chocolate is. Choose which chocolate chips you want to use. The decision is yours! Check out the recipe on the next page.
Admittedly, I’m not the most adept of bakers. It’s something that I hardly do, and it takes a very special looking cookie recipe to get me to bake. This is one of those! I know it’s not super special, but the flavor combos sound phenomenal right now. Therefore, chocolate cherry shortbread cookies are in my very near future.
1 cup (2 sticks) unsalted butter, room temperature
1/2 cup confectioners sugar
2 cups all-purpose flour
1/2 teaspoon salt
1 cup maraschino cherries, chopped
