Don’t Settle For Average – This Pot Roast Is Superb!
After the first time I served this pot roast at a family get-together, I got so many requests for the recipe that I decided I would write it down for all of my guests the next time. I’m glad I did, because it was just as great a success! When it comes to pot roast, you can’t really go wrong with a slow cooker. These type of meals are begging to be slow cooked, and I have no problem letting my trusty old crock pot do all the work for me.
This has become my holiday special, and by holiday I mean ANY holiday. Christmas, Easter, birthday, my-kid-lost-his-first-tooth-day; I’m using any and all kinds of excuses to make this!
Although, this recipe is so simple you could make it on a weekday. Set your crock pot on low in the morning and return to a beautifully cooked meal after work. If you happen to have some homemade bread on the side, it’s pure heaven. Dip it into the drippings and it’ll make your eyes roll back!

Feel free to add any of your favorite root veggies into this. I am pretty much always making this exactly as is, but occasionally I’m only using carrots, or adding more potatoes. It’s up to you, really!
The red wine and tomato paste bring in so much flavor compared to a more classic pot roast recipe. You know what they say; it’s fun to cook with wine and sometimes even add it to the food! Haha! Seriously though, a glass of nice red will go perfectly with this meal and turns this into a special dinner in a heartbeat.
