Blue Ribbon Chicken Pot Pie


When we were very young children, my parents had to work a lot.
They both were blue collar workers, and they wanted to make sure that we never wanted for anything at the same time. It was difficult to not have them around, but, because they worked so hard to move up in their positions, by the time we were in high school, they didn’t have to work quite so hard anymore. It was nice to finally have them home with us at night after school and on the weekends.
On those special weekends, when Mom wanted some comfort food, she would make the most incredible chicken pot pie that I had ever tasted. It was so much better than the frozen ones that we used to get when they were much busier. It looked just like this recipe from Facebook.
Now, when I am home with my kids on the weekend, I like to remember those simpler times, and I make these for us. Usually, two at a time, because they go quick!

Whenever I have a friend or neighbor that needs a helping hand, I like to make and take them one of these pot pies. It can be completely assembled ahead of time and then stuck in the freezer. That way, when they need a nice home cooked meal done, it’s already done for them. I get tons of compliments on this and it makes me feel good knowing I was able to help someone in need.

Ingredients

2 lb chicken breasts, boneless and skinless
2 c Swanson chicken broth (enough to cover breasts)
1/2 tsp salt
1/4 tsp ground black pepper
1 1/2 c half and half
3 Tbsp Land O’ Lakes butter (yes, 3 tablespoons!)
