INGREDIENTS
2 cups all-purpose flour
3/4 cup creamy peanut butter
3 very ripe bananas, mashed
2 eggs, beaten
1/2 cup dark brown sugar
1/4 cup (1/2 a stick) unsalted butter, melted
2 teaspoons baking soda
1 1/2 teaspoons cinnamon
1 teaspoon vanilla extract
1/2 teaspoon salt
1 cup dark chocolate chips
PREPARATION
Preheat oven to 350°F and grease a 9×5-inch loaf pan with nonstick cooking spray. Set aside.
In a large bowl, whisk together the flour, baking soda, cinnamon, and salt. Set aside.
In a separate large bowl, mix together the mashed banana, butter, peanut butter, sugar, eggs, and vanilla until well combined. Pour this mixture into the flour mixture and stir until thoroughly combined. Stir in chocolate chips.
Pour batter into prepared loaf pan and bake until a toothpick inserted into the center comes out clean, 60-75 minutes. Allow bread to cool in pan for 10 minutes before turning out onto a wire rack to cool completely. Enjoy!
