Lemon Meringue Fudge


This recipe for fudge candy calls for white granulated sugar, heavy cream, unsalted butter, salt, white chocolate chips, marshmallow fluff, lemon zest, lemon curd, miniature marshmallows and graham cracker crumbs.

So while this easy dessert recipe does include some white chocolate chips, it doesn’t require cocoa or real chocolate in it which is what regular fudge recipes will call for.

Some don’t even consider white chocolate to be chocolate because of the absence of cocoa which is what makes chocolate rich. White chocolate is made using cocoa butter, which is part of the cacao bean, but it’s the fat rather than the chocolate. You may notice that chocolate will have white spots on it if it sits around for too long, that’s the cocoa fat separating from the chocolate.

The cocoa butter will come in a block or in chunks and it kind of looks like a bar of soap. It’s usually best to look for it a health food store or buy it online if you can’t find it in your area. Always make sure that it’s food grade cocoa butter as some of it is used for making bath and body products as well.Then, the cocoa butter is mixed with sugar and cream to thin it out, and it’s placed into moulds to set.
