Old Fashioned Corn Fritters


My Aunt was always famous for her corn fritters. Whenever we would road trip it to Kentucky, we could expect to be welcomed with the delicious aroma and then the amazing taste of the little poppers. It seemed like nobody could every compare to her yummy recipe. Then, I found this one on All Recipes and figured I would try it out and see if it was remotely close. When these bad boys came out, I could tell they were going to be perfect… and I was right.
They were amazing! We drizzled some maple syrup over the top and my oh my.They disappeared in what seems like just a few seconds. My whole family loved them and I continue to make them for game nights and special parties. If we have time at home on the weekends, I will surprise my loved ones with this special treat!

Whenever I make these I let the batter rest for a bit on the counter. It seems like it helps the corn fritters to cook better when the time comes. You should deep fry them in small batches and avoid overcrowding the pan. Otherwise they will stick together and you’ll have a huge disaster.
