Old Fashioned Corn Fritters

My Aunt was always famous for her corn fritters. Whenever we would road trip it to Kentucky, we could expect to be welcomed with the delicious aroma and then the amazing taste of the little poppers. It seemed like nobody could every compare to her yummy recipe. Then, I found this one on All Recipes and figured I would try it out and see if it was remotely close. When these bad boys came out, I could tell they were going to be perfect… and I was right.
They were amazing! We drizzled some maple syrup over the top and my oh my.They disappeared in what seems like just a few seconds. My whole family loved them and I continue to make them for game nights and special parties. If we have time at home on the weekends, I will surprise my loved ones with this special treat!

Whenever I make these I let the batter rest for a bit on the counter. It seems like it helps the corn fritters to cook better when the time comes. You should deep fry them in small batches and avoid overcrowding the pan. Otherwise they will stick together and you’ll have a huge disaster. Check out what they are saying about this recipe over at All Recipes:
“These are yummy! They’re a bit time-consuming and messy to make, but worth the time and trouble, I think!”
This is definitely a recipe that you have to reserve for when you have some extra time to spare. They are right though, it’s worth the effort to sink into one of these fritters!
