Strawberry Rhubarb Pie – a Summer Favorite

Rhubarb practically grows like a weed in most areas, and you have to cut it back and manage it, so it doesn’t grow out of control in your garden. Usually, it will grow in one corner of your garden or yard, and it’s best you just keep a couple of plants, so it doesn’t take over the entire garden plot.

Even just two rhubarb plants will give you more than enough rhubarb to make dessert recipes and other recipes with. Rhubarb stalks look similar to celery stalks, but instead of being a light green colour, they are red with a deeper green. They also have big leaves on top of the stalks which shouldn’t be eaten as they can be poisonous.

The plant has been used for medicinal purposes in Chinese medicine for thousands of years. It was mainly used as a laxative and was one of the first Chinese medicines to be planted in North America.

2 1/2 C Strawberries, sliced
2 1/2 C Rhubarb, cut into 1-2 inch pieces
1 C Sugar, plus extra tsp. to decorate crust
