Greek-Style Watermelon Salad with Feta and Mint


Ingredients

3 Cups Watermelon , cubed
1 Cucumber, peeled, seeded & diced
½ Red Onion, sliced
2 Tomatoes, diced
½ Cup Fresh Mint, roughly chopped
1 Lemon , zested and juiced
¼ Cup Olive Oil
Salt & pepper, to taste
⅓ Cup Crumbled Feta Cheese

Directions

In a large bowl, combine watermelon, cucumber, red onion, mint, tomatoes, lemon zest, lemon juice, and olive oil. Season with salt and pepper to taste and toss to evenly mix. Sprinkle with crumbled feta cheese and serve.

In warmer weather, we crave light, vegetarian dishes like this one that make beautiful use of seasonal produce. You can also make this salad vegan by switching out the feta cheese for Kalamata olives so you don’t lose that tangy element. And if you’re not a mint fan, try basil instead.
