Weekend Warrior Tamale Pie Casserole – It’s A Keeper


I am so impressed with the folks over at the About A Mom website for coming up with this gem of a casserole. From the cornbread to the savory filling I simply cannot get enough of this yummy stuff! My husband and kids absolutely love it and I can’t blame them! You get a spicy kick of Mexican flavors paired with delicious cornbread and soft rice. It’s seriously a little piece of heaven in a pan.

I can’t think of many foods I enjoy more than this zesty beef and cornbread combination. Add a dollop sour cream on top, and I’m a happy camper. This is one of those meals that I like to share with grandma and grandpa. My Dad is a huge fan of this dish.
I should serve this casserole to my dad because he will undoubtedly love it, too ?
