LEMON CHESS PIE

Ingredients

  • 2 2/3 cups sugar
  • 1 tablespoon plus 1 teaspoon white cornmeal
  • 1 tablespoon plus 1 teaspoon flour
  • 6 eggs
  • 6 tablespoons butter
  • 1/3 cup lemon juice
  • 1/3 cup whole milk
  • 2 teaspoons fine lemon zest

Directions

  1. Preheat oven to 325 degrees F.
  2. Combine sugar, cornmeal, and flour. Add eggs one at a time. Mix until mixture is pale yellow and slightly foamy.
  3. Add melted butter, lemon juice, and milk. Blend until well combined.
  4. Fold in lemon zest. Divide mixture between two pie shells.
  5. Bake for 45 minutes or until the top is lightly golden and crust begins to brown.
  6. Refrigerate pie until ready to serve.
