I don’t know about you but the first few weeks after the holidays I’m always on a pretty tight budget.

This reminds me of the cabbage rice bake my grandmother always used to make when I was little. I wasn’t a big fan of cabbage back then, but I sure loved that dish! My husband, on the other hand, is crazy about cabbage and this casserole is one of his all-time favorites. I think I’m going to make a double batch of this!
