Maple Breakfast Cookies


INGREDIENTS

1/2 cup butter, softened
1/2 cup granulated sugar
1/2 cup brown sugar
1 egg
1/2 teaspoon vanilla
1 cup all-purpose flour
1/2 teaspoon salt
1/2 teaspoon baking soda
1 teaspoon cinnamon
1 1/2 cups quick cooking oats
For maple glaze:
1 cup powdered sugar
2 tablespoons maple syrup
2 tablespoons milk

PREPARATION

When ready to bake, preheat oven to 375°F and thoroughly grease a baking sheet with nonstick spray.
In a large mixing bowl, beat butter and white and brown sugars together with an electric mixer on medium speed until fluffy. Add egg and vanilla extract and beat until combined.
In a separate bowl, whisk together the flour, baking soda, salt, and cinnamon and gradually mix in to the butter mixture. Stir in the oats and cover the dough. Chill for at least 1 hour.
Once chilled, scoop out 1/3 cup of dough, roll into a ball, and place onto baking sheet, 3 inches apart. Using a fork dipped in water, flatten each ball slightly.
Bake until cookies are golden brown, 10-12 minutes. Allow to cool on baking sheets for 3-5 minutes before removing to a wire rack to cool completely.
While cookies are cooling, make the icing:
In a medium bowl, beat together the powdered sugar, maple syrup, and milk.
